Date Truffles
From time to time all of us have a sweet tooth for something sweet and delicious. When you climb a mountain trail or hike in the forest this craving can be pretty strong, especially for children.
We like this recipe for its simplicity and convenience. Date truffles are so handy to add to your lunch bag, hand out to the kids when they’re hungry, or enjoy after your camping dinner with a cup of hot tea.
Prep Time: 15 minutes
Cook time: 0 minutes
Total Time: 15 minutes
Ingredients (one batch):
- 150 g pitted Medjool dates
- 1 cup raw walnuts
- 4 tbsp coconut oil (optional)
- 8 tbsp of cacao powder
- Your favorite coating (we often use cacao powder, but you can also use coconut shreds, chia seeds, sesame seeds, etc.)
Directions:
- Soak the dates in hot water for 10 minutes, drain, and remove the skin (if you like the truffles more tender) and pits.
- Add all ingredients to a blender or food processor.
- Process until the mixture becomes a big dough ball.
- Scoop out approximately one tablespoon of dough and roll it into a small ball. Repeat the same with the rest of the dough.
- Add your favorite coating to a plate (cacao powder in our case) and roll the balls in the coating until fully covered.
Enjoy and remember, enjoying just one will be difficult!
Keep the truffles in a closed food container in a freezer (if you have some left 😁) and take them out 30 min before consumption.
